So last week we went with my family to a restaurant we all love for just one reason – their dessert.
It’s to die for. Really.
Baked apples and your choice of coffee or cinnamon ice cream is served on top of a warm puff pastry. It’s so wonderful. They serve it with drizzled caramel, whipped cream, and dark chocolate shavings. It’s amazing.
Someday, hopefully, we can recreate a more healthy version of this dessert. But until then, we’ll just have to settle with our oven baked apples topped with homemade cinnamon ice cream.
Cinnamon Ice Cream
My husband came up with this recipe the other day so I figured I’d better give him the credit. But I ate it. So I took part in the process, too. Hehee…
Ingredients
- 2 cups cream
- 1 cup whole milk
- 1/3-1/2 cup honey
- 1 Tablespoon vanilla
- 1 Tablespoon cinnamon
- 1 egg yolk (optional)
Directions
Combine all the ingredients into a bowl and mix with a whisk until thoroughly blended.
I have a Kitchen Aid ice cream freeze bowl that I use to make homemade ice cream. I just keep the bowl in the freezer so that whenever we want to make ice cream, it’s ready to go. It makes about a quart of ice cream and takes about 20 minutes.
Follow your ice cream maker’s instructions for making a batch of ice cream and then freeze until ready to serve.
This is served best on top of some warm baked apples. The ice cream gets all warm and melty and yummy…
I’ll have to work on coming up with a grain-free puff pastry recipe. If I could figure out a really yummy pastry, I’d be in heaven. Not sure that will ever happen, though.
This is good enough for now anyway.
