Fall is in the air!
There’s been a cold nip in the air the past few days. Hopefully it was just a little cold snap and it will warm back up here really soon.
I really hate to say goodbye to summer just yet!
Going into fall, though, what better breakfast treat than these soft, warm apple muffins!
The kids and I have made these muffins multiple times already and they are delicious!
They are also gluten free, dairy free, nut-free, and free of processed sugars.
I had recipes for apple cinnamon almond flour muffins but I wanted a recipe that used coconut flour rather than almond flour.
Almond flours are too harsh for my digestive system and my daughter can’t have nuts, so I was on a mission to find an apple muffin recipe that used coconut flour.
I searched the internet and, still, I found none!
So the kids and I came up with our own coconut flour apple cinnamon muffin recipe.
I bought my coconut flour from Nutiva. (I got free shipping and a great coupon code from liking their facebook page. You might be able to get the same deal!)
These muffins are really easy to put together. They’ll be ready in a snap.
The kids always like to help me make muffins in the morning. My daughter has made herself queen paper liner placer and my son is the official stirrer.
There’s one tip I want to share with you.
If you let your eggs come to room temperature before you get started, you won’t get the white lumps of coconut oil that you can see in my picture below.
I was lazy and wanted to make these quickly so my cold eggs hardened my melted coconut oil, which resulted in white lumps.
It may not matter that much because my muffins tasted great! However, when the oil gets lumpy it doesn’t get completely blended into the batter like it should.
In the summer, my coconut oil is usually a liquid straight from my pantry. Very convenient! In the colder months, however, I will melt the oil on the stove, over low heat.
These muffins are best when they are still warm… And with a little butter on top, they’re perfect!

- 1 1/2 cup apple peeled and chopped
- 6 eggs, room temperature
- 1/2 cup coconut oil, melted
- 1/2 cup honey
- 1 Tablespoon vanilla
- 3/4 cup coconut flour
- 1/2 tsp. salt
- 1/2 tsp. baking soda
- 1 tsp. cinnamon
- Preheat oven to 350 degrees.
- In a large bowl mix together the eggs, coconut oil, honey, and vanilla. In a small bowl combine the coconut flour, salt, baking soda, and cinnamon.
- Add the dry ingredients into the wet ingredients and mix just until combined and there are no lumps. Gently fold in the apples. Be careful not to overmix.
- Pour the batter into lined or greased muffin tins. Bake for about 25 minutes or until the tops are just golden.

Those do look yummy! I’ve never heard of cooking with coconut flour. Well, really I’ve never heard of coconut flour lol ~ Do they have a coconut taste to them?
